Fresh Basil & Lemon Pasta

Lemon & Basil Pasta

Ingredients

  • 1 box cassava penne (or pasta of choice)
  • 1 medium yellow squash – sliced
  • 1/4 cup yellow onion – diced 
  • 2 cups spinach – chopped 
  • 4 tbsp. fresh basil – chopped 
  • 3 tbsp. olive oil
  • 1 large lemon – juiced 
  • Salt & pepper to taste 

Instructions

  1. Bring a large pot of water to a boil.
  2. Add pasta and cook for 7-9 minutes (or follow instructions for the pasta you are using).
  3. In a large pan heat 1 tbsp of olive oil and sauté diced onion until translucent.
  4. Add sliced squash and cook until lightly browned.
  5. Add spinach and cook down. Remove pan from heat.
  6. Add cooked pasta, lemon juice, olive oil, and fresh basil to the pan and mix until well combined. Add salt & pepper to your preference. *This recipe serves about two.
