Ingredients
- 1 box cassava penne (or pasta of choice)
- 1 medium yellow squash – sliced
- 1/4 cup yellow onion – diced
- 2 cups spinach – chopped
- 4 tbsp. fresh basil – chopped
- 3 tbsp. olive oil
- 1 large lemon – juiced
- Salt & pepper to taste
Instructions
- Bring a large pot of water to a boil.
- Add pasta and cook for 7-9 minutes (or follow instructions for the pasta you are using).
- In a large pan heat 1 tbsp of olive oil and sauté diced onion until translucent.
- Add sliced squash and cook until lightly browned.
- Add spinach and cook down. Remove pan from heat.
- Add cooked pasta, lemon juice, olive oil, and fresh basil to the pan and mix until well combined. Add salt & pepper to your preference. *This recipe serves about two.
