Ingredients
- 1 cup oat flour
- ½ cup coconut flour
- Pinch of sea salt
- 1/2 tsp. baking soda
- 1-2 tbsp hemp seeds (optional)
- 2 organic pasture-raised eggs
- 1/3 cup maple syrup
- 1/4 cup coconut oil – melted
- 2 tbsp. hemp milk
- 1/2 tsp. vanilla extract
- 2-4 tbsp. lemon juice
- Zest of one lemon
Glaze
- 1/3 cup coconut butter
- 1 tbsp. coconut oil
- 1–2 tbsp. maple syrup
- 1 tbsp. lemon juice
- Hot water
Instructions
- Preheat oven to 350°F.
- Whisk all dry ingredients in a bowl.
- In another bowl, whisk together all wet ingredients and lemon zest.
- Add dry mixture to wet and combine.
- Grease donut pan with coconut oil and then add mixture (I used a large zip-lock bag with the corner cut out).
- Bake for approx. 15 min or until golden.
- Let cool for 10 minutes.
- Melt coconut butter and coconut oil over the stove on low heat.
- Whisk in maple and lemon juice.
- Remove from heat and whisk in hot water 1 tbsp. at a time until the glaze is smooth.
- Glaze donuts.
