Lemon & Coconut Donuts

Ingredients

  • 1 cup oat flour ⁣⁣
  • ½ cup coconut flour ⁣⁣
  • Pinch of sea salt⁣⁣
  • 1/2 tsp. baking soda⁣⁣
  • 1-2 tbsp hemp seeds (optional)⁣⁣
  • 2 organic pasture-raised eggs ⁣⁣
  • 1/3 cup maple syrup⁣⁣
  • 1/4 cup coconut oil – melted⁣⁣
  • 2 tbsp. hemp milk⁣⁣
  • 1/2 tsp. vanilla extract⁣⁣
  • 2-4 tbsp. lemon juice⁣⁣
  • Zest of one lemon⁣⁣

Glaze

Instructions

  1. Preheat oven to 350°F.⁣⁣
  2. Whisk all dry ingredients in a bowl. ⁣⁣
  3. In another bowl, whisk together all wet ingredients and lemon zest. ⁣⁣
  4. Add dry mixture to wet and combine.⁣⁣
  5. Grease donut pan with coconut oil and then add mixture (I used a large zip-lock bag with the corner cut out). ⁣⁣
  6. Bake for approx. 15 min or until golden.⁣⁣
  7. Let cool for 10 minutes. ⁣⁣
  8. Melt coconut butter and coconut oil over the stove on low heat.
  9. Whisk in maple and lemon juice. ⁣⁣
  10. Remove from heat and whisk in hot water 1 tbsp. at a time until the glaze is smooth.⁣⁣
  11. Glaze donuts.
