Ingredients
- 4 heaping cups mixed greens
- 1/4 of a fennel bulb – sliced thin (I used a mandolin)
- 3 rainbow radishes – sliced thin (mandolin)
- 2 green onions – sliced thin
- 1/4 of a small red onion – sliced thin (mandolin)
- 2 tbsp. hemp seeds
- 1 avocado (not pictured, but I added before serving)
Dressing
- 1/2 lemon – juiced
- 3 tbsp. olive oil
- 1 tbsp. red wine vinegar
- 1/2 tsp. raw honey
- Salt & pepper to taste
Instructions
- Combine salad ingredients in a large bowl.
- Whisk dressing ingredients in a small bowl.
- Pour dressing into the salad and mix until combined.
