Ingredients
- 1 large sweet potato – peeled & shredded
- 3 tbsp. onion – diced
- 3 tbsp. almond flour
- 1 organic pasture-raised egg
- Salt & pepper to taste
- Optional toppings- avocado, green onion & parsley
Instructions
- Preheat oven to 400°F.
- Squeeze out excess moisture from shredded sweet potato.
- Combine all ingredients in a medium bowl.
- Line a medium baking sheet with parchment paper.
- Form the mixture into patties and press down so they are about 1/2 inch thick.
- Bake for approx. 30 minutes, flipping halfway through.
- Top with desired toppings.
